We adore cheese, every kind of cheese; vintage cheddar, brie, cambozola, edam, you name it! What we don't love is when we open a tasty block of our favourite cheese to find that mold has started to grow or that it has become hard at the edges! 1. TOSS THE PLASTIC

When you get home from shopping, remove the cheese from its' plastic wrap. Plastic is not breathable and it actually creates the perfect environment for mold to grow as moisture builds up in the plastic and on the cheese, accelerating mold growth. Have you ever noticed a block of cheese feel damp or wet as if there is condensation on it? That's the moisture from the plastic!

Plastic can also transfer a plasticky flavour to your cheese so you may want to scrape the sharp edge of a knife along the outer surface. 

2. BEESWAX WRAP TO THE RESCUE

Next, rewrap your block of cheese in a Beeswax Wrap and make sure to seal it closed around all edges with the warmth of your hands. Beeswax is breathable so moisture won't build up and the cheese will last much longer. Beeswax is also naturally antibacterial like honey and helps to prevent the growth of mold. It also prevents the cheese from going hard on the edges.

For a lot of that time, the only company I had was nature. I watched the birds come in and out into the feeders in early Spring and on into Summer.
