1. TOSS THE PLASTIC

When you get home from shopping, remove the cheese from its' plastic wrap. Plastic is not breathable and it actually creates the perfect environment for mold to grow as moisture builds up in the plastic and on the cheese, accelerating mold growth. Have you ever noticed a block of cheese feel damp or wet as if there is condensation on it? That's the moisture from the plastic!

Plastic can also transfer a plasticky flavour to your cheese so you may want to scrape the sharp edge of a knife along the outer surface. 

2. BEESWAX WRAP TO THE RESCUE

Next, rewrap your block of cheese in a Beeswax Wrap and make sure to seal it closed around all edges with the warmth of your hands.
